Certainly, one of the most important measures in the field of saffron production and processing is the use of artificial intelligence in different parts of production to the supply of saffron. With the help of this, in addition to integrating the country’s saffron management, it is possible to reduce the risk in production and increase productivity. For this reason, the OSEC Club, with the participation of academic elites, has designed a system of authenticity and saffron stigma analysis using artificial intelligence in the first step. In addition to determining the real grade of saffron, this action will play an important role in the accurate pricing of saffron products.
By using artificial intelligence, the analysis is done based on the color, which according to the color obtained in the charts and its matching with the original saffron color shows that the sample is not adulterated.
Using the visual detection device, the length of the saffron stigma can be checked, and the maximum length of saffron in healthy samples is 26.0 mm and the minimum is 18.0 mm.

The intelligent saffron analysis and pricing system, by imaging the saffron stigma, detecting the edges and length of the stigma and the band of the saffron through the use of theories based on machine learning technology, has the ability to identify, categorize and classify saffron in 8 different grades.
